Cake mix - a dessert Elitistreview

Right, let me make it abundantly clear that this cracking idea for a dessert is universal copyright David Strange ad infinitum. If I find any restaurant is using this without paying me stacks of cash I shall come and wee in your fridges, write slanderously bad reviews of you and sue your arses off.

The Grill's rice pudding creme brulee

When dining at The Grill at The Montcalm I had one of the best desserts of my life: rice pudding cr?me brul?e. There is a picture of it here, doesn?t look anywhere near as wizard as it was. It was not simply sophisticated comfort food made incredibly well, it was brilliant nursery food targeted at one?s most joyously childish sensibilities. This gave me a brilliant idea for a beezer dessert.

Perhaps more than any other food, desserts appeal to our juvenile side. They are themed on sugar and quite often dairy products; no matter how complex the construction these flavours appeal to the toddler in us all. There is absolutely nothing wrong with this. It is certainly true that for the young of heart everything is fun and the simple pleasures of childhood days are accessible to all but the most drably rancid and crapulent ? why not enjoy those pleasures in food?

There's still some toddler in me

Those of us who were blessed with guardians skilled in the culinary arts will have many memories of spiffing desserts as children. My mother was a great cook; I remember with pleasure the sheets of skin hanging down from the burned roof of my mouth caused by greedily attacking her brilliant jam and lemon curd tarts, and mince pies after too little time out of the oven when the fillings were still at global thermonuclear war temperature.

She made amazing apple crumbles with caramelised apple fillings that I?d even horse down in preference to my normal staple of unadulterated custard. These delights encouraged me to cook and I was soon making crumbles, baroque Sherry trifles and all manner of things by myself.

The thing Linda was really proud of was her sponge cakes. She always commented that when she gave them to people they said how light and fluffy they were, what a great texture they had, and how they were never dry or hard. I liked her making them for other reasons.

Hanging around the kitchen can get rewards

When she was mixing up butter, sugar, flour and occasionally lemon, lime or orange rind and juice for her fruit sponge cakes, I would hang around the kitchen with purposeful intent. Soon there would be a not-quite empty bowl used for the cake mix that I could greedily scrape clean using spatula, fingers and, if there was a really rich vein of cake mix and the bowl was big enough (or my head was still small enough) my tongue. Cake mix was an unparalleled joy.

Of course, what seemed like an interminable time after the cake mix was sucked off all implements there was cake. Hooray! My mother was right to be proud of her sponge cakes as she was extremely good at making them. A good sponge cake, possibly flavoured, with a nice filling and icing on top can be a real pleasure. If you are really childish then a big dollop of whipped cream will really enhance a sponge. They provided a totally winning experience.

So why not turn this into a topping dessert for bigger people who are in touch with their inner child?

For a start you are presented with a bowl generously larded with quality cake mix, which could easily be flavoured with some attractive combination of fruit, booze, chocolate or similar, and a tool or two with which to scrape the bowl clean of this wonderful concoction. You then get a little finger bowl to wash your mitts in case you got carried away polishing off the mix and used your hands. No shame in that!

Then, of course, you get served the finished cake! It would only have to be a little thing as presumably you?d have eaten plenty of mix, but when you eat the cake you can pretend you are all grown up and eat like a big boy/girl, even if you preferred the hedonistic delight of raw cake mix. Cracking, eh?

I am clearly a very large child, but then I always was

I admit this might not work at all but the most bleeding edge of three-stars, but at a certain kind of restaurant people would be lapping it off the bowls. Restaurants that serve food targeted at one?s primal urges and basic instincts of enjoyment would find cake mix and cake an incredible addition to their pleasure portfolio. Of the restaurants I regularly visit I think this would be a winning wheeze at Hawksmoor and probably also The Grill at The Montcalm; basically anywhere focused on raw pleasure. I can feel Heston Moomintroll preparing to swipe this cunning creation right this moment for the Corpulent Canard?s menu.

Even little deli?s and perhaps ?oooh fancy!?-supermarkets like Waitrose would do well to sell you a little box containing a mix-smeared bowl, a little spatula and a cake for after afters. I will remind all these establishments of the first paragraph and await any contacts from executive chefs about royalty payments[].

More generally, unless you are aiming for high gastronomic art, this is what food should be about: enjoyment and pleasure. We are obliged to eat so it makes sense to revel and wallow in the experience and extract as much gratification from it as possible. This is what places like Hawksmoor, The Grill, The Bangkok Brasserie and Pizzeria Santa Maria do so well, serve excellent food that makes you happy. Why not make the child in you happy too? Have some corking cake mix!

Nestle sales beat hopes but tough year expected (AP)

GENEVA ? Nestle SA, the world's biggest food and drinks maker, managed to brush aside the impact of a soaring domestic currency to post a solid increase in profits in 2011 as sales rose strongly, particularly in developing countries.

However, the maker of Nescafe, Perrier, Jenny Craig and Haagen Dazs accompanied its full-year statement on Thursday with a warning that tough times lie ahead.

The company based in Vevey, Switzerland reported that its 2011 net profit rose 8 percent to 9.5 billion Swiss francs ($10.35 billion) if the disposal of eye care company Alcon is stripped out of the comparison. The sale last year had boosted Nestle's 2010 profit to 34.2 billion Swiss francs ($35.8 billion).

Nestle's 7.5 percent sales growth in its continuing sales during the year was better than expected. Analysts had predicted growth of about 7 percent as it grappled with volatile markets, rising commodity prices and the strength of the Swiss franc.

Shares in Nestle were up 1 percent to 55 francs at the start of Zurich trading Thursday.

Overall sales for 2011, however, fell to 83.6 billion francs ($91.11 billion) from almost 110 billion francs the year before. The decline, largely due to changes in currency rates and the impact of asset disposals, was slightly less than expected as the Swiss National Bank intervened in the markets to try and stem the rise of the franc, helping sales in the last few months of the year.

The company said expects organic sales growth over the coming year would likely come in lower but still at its target of 5-6 percent.

"It was a challenging year, and we do not expect 2012 to be any easier," said Chief Executive Paul Bulcke.

"We're really living in a new reality," Bulcke said of the world's financial crises and political upheaval in the past year. He called them "tectonic shifts" in which wealth was moving to developing nations and where governments were faltering in solving big problems, such as Europe's debt crisis.

"That lowers consumer confidence," he said.

Nestle said it was neverthless continuing to grow in all regions of the world, with 5 percent growth in Europe and 6.4 percent in the Americas ? where pet care products and frozen pizza was selling well. Sales rose 13.1 percent in Asia, Oceania and Africa. Some of the best growth was seen in India, Pakistan, North Africa, Central West Africa and Egypt.

With 280,000 employees worldwide and factories or operations in almost every country in the world, Nestle is a major buyer of food commodities such as wheat, sugar, milk and coffee and its results are a good indicator of consumer demand and the health of the global economy as a whole.

James Singh, the chief financial officer, said "the battle for 2011" was how to contend with the strong franc and keep costs down. He said the company pulled every "lever" it could to contain costs.

Singh would not comment on the company's interest in buying Pfizer's $10 billion Wyeth infant nutrition business to further bolster its growth in China, where sales are now almost 5 billion francs annually.

Jean-Philippe Bertschy, an analyst at Bank Vontobel in Zurich, said the planned dividend of 1.95 francs per share and underlying profit were in line with expectations.

The double-digit growth in emerging markets helped it deliver a "phenomenal" final quarter in 2011, he said, but its strict control of operating expenses and high prices also helped it outpace competitors.

"Nestle had great results from a very good quarter, beating the competition again," he said. "The outlook is relatively positive, given the difficult environment."

Patrik Schwendimann, of Zuercher Kantonalbank, said Nestle deserves a prize for its great results and called it a positive sign that Nestle was helped by Switzerland's currency intervention.

CEO Bulcke said Nestle's 31 percent stake in French cosmetics maker L'Oreal will not be affected "in any way" by its board shakeup from 89-year-old heiress Liliane Bettencourt, who has a 30 percent stake in L'Oreal, being replaced on the board by her grandson.

Obama Aims $1.4 Trillion Tax Increase at Highest U.S. Earners ...

Feb. 14 (Bloomberg) ? President Barack Obama called for $1.4 trillion in fresh revenue from Americans at the top of the income scale, proposing higher taxes on wages and investments and limiting breaks for retirement savings and health insurance.

The tax proposals in the administration?s fiscal 2013 budget plan, released yesterday, were immediately rejected by business groups and congressional Republicans, who said the ideas are part of Obama?s re-election strategy and gave them little chance of advancing into law in 2012.

?Whether this occurs in Congress this year or this is the tax platform for this year?s election, it?s disconcerting for businesses,? said Caroline Harris, chief tax counsel at the U.S. Chamber of Commerce, the nation?s largest business group.

In what he billed a bid for tax fairness and deficit reduction, Obama reversed his previous policy of taxing dividends more lightly than wage income. The budget plan would raise $206.4 billion over 10 years by treating dividends as ordinary income for married couples making more than $250,000 a year and individuals making more than $200,000.

?We simply can?t afford to devote $206 billion for lower tax rates for the highest-income Americans,? Gene Sperling, White House director of the National Economic Council, told reporters. ?Our system for taxing investment income for the most well off Americans is clearly broken.?

Higher Rates

Obama is proposing a top individual income tax rate of 39.6 percent in 2013, up from 35 percent. His budget would tax long- term capital gains at a top rate of 20 percent, up from 15 percent. The top dividend tax rate is now 15 percent.

An additional 3.8 percent tax on the unearned income of couples earning $250,000 and individuals making at least $200,000 will take effect next year as part of the 2010 health- care law. As a result, under Obama?s plan some taxpayers would pay 43.4 percent in federal taxes on their dividends next year. That?s almost triple what they now pay and comes on top of corporate taxes.

A coalition of companies, including AT&T Inc. and United Parcel Service Inc., has been lobbying to maintain the current rates on capital gains and dividends. Democratic leaders in Congress may take their cues from Obama and propose a higher tax rate on dividends than on capital gains, said Jim McCrery, a lobbyist for the coalition.

?There was some comfort in knowing that the president was supporting a top rate for both of 20 percent, and now that?s been taken away,? said McCrery, a former Republican member of Congress from Louisiana who sat on the House Ways and Means Committee.

Policy Difference

Clint Stretch, managing principal of tax policy at Deloitte Tax LLP in Washington, said the administration?s proposal to tax dividends at higher rates than capital gains is surprising, because such gains tend to go to those with the highest incomes.

?What is the policy difference that the administration has suddenly found between qualified dividends and capital gains?? he said. ?Why do they get different rates now??

The administration also wants to impose a 30 percent minimum tax for individuals with annual incomes of at least $1 million, known as the Buffett rule after billionaire investor Warren Buffett, who originated the idea last year.

That would replace the alternative minimum tax, ?which now burdens middle-class Americans rather than stopping the richest Americans from paying too little as was originally intended,? the administration said.

Tax Code Rewrite

Sperling said the AMT would be eliminated as part of a broader rewrite of the U.S. tax code. The administration hasn?t made such a proposal, and the budget released yesterday didn?t include repealing the AMT or imposing the Buffett rule.

Obama?s budget doesn?t say how much revenue the Buffett rule would generate and it doesn?t provide details on how the proposal would affect individuals? tax calculations. The U.S. collected $39.1 billion from the alternative minimum tax in 2011, according to projections from the Tax Policy Center, a nonpartisan research organization in Washington.

Obama?s budget plan revives calls to allow the 2001 and 2003 tax cuts on income and capital gains to expire at the end of 2012 for families earning more than $250,000 a year. It also proposes capping itemized deductions and other tax benefits for these families at 28 percent.

The list of capped tax breaks includes municipal bond interest and employer-sponsored health insurance. In its budget, the administration expanded the proposal to include contributions to tax-advantaged retirement accounts such as 401(k) plans.

Private Equity Managers

The president?s plan would tax the profits-based compensation paid to private equity managers at ordinary income rates instead of a preferential 15 percent rate. It also would curtail tax breaks for corporate jets and oil and gas companies.

Obama reintroduced previous years? proposals to limit U.S. companies? ability to defer taxation on income earned overseas. He proposed new breaks for businesses that hire more workers, manufacture advanced vehicles, make capital investments or bring jobs into the U.S.

?This is not an integrated plan for tax reform,? said Hank Gutman, principal in charge of federal tax legislative and regulatory services at KPMG LLP in Washington. ?These are ad hoc proposals to address issues the administration perceives as important.?

Representative Dave Camp, who heads the House Ways and Means Committee, said Obama?s proposals wouldn?t foster the neutral platform that businesses need to compete.

Picking Winners

?The president has decided to play the age-old Washington game of picking winners and losers and handing out favors to industries he thinks will help him politically, making the code less fair and more complex for average Americans,? said Camp, a Michigan Republican who is developing a tax-code overhaul.

Separately from the budget, Obama is proposing a rewrite of the corporate tax system to eliminate tax benefits to lower the top corporate rate from 35 percent. The administration plans to release more details of its corporate tax framework by the end of the month.

The administration also proposed a boost to tax enforcement for the Internal Revenue Service, increasing the agency?s budget by 8 percent to $12.8 billion.

Small Business Confidence in a Lull | Green Mountain Scribes

Government reports seem upbeat, but Main Street is not so confident

WASHINGTON, D.C.? Rising just one tenth of one percent in January, the Small-Business Optimism Index settled at 93.9, a slight increase from the December 2011 reading, according to the National Federation of Independent Business (NFIB). While the increase marks five consecutive months of improvement, the readings from January and February 2011 were higher, indicated no net gain for the calendar year. Historically, optimism remains at recession levels. While owners appeared less pessimistic about the outlook for business conditions and real sales growth, that optimism did not materialize in hiring or increased inventories plans.

?The most positive statement that can be made about January?s reading is that the Index did not go down; a change of 0.1 points is essentially no change and it is hardly indicative of a surge in economic activity,? said NFIB Chief Economist Bill Dunkelberg. ?Nothing happened last month that would significantly improve the small-business outlook; Washington is at a stalemate. The Index remains below its level a year ago of 94.1 which means that no progress was made in 2011. Congress has failed to pass a budget for over 1,000 days, and without discipline on spending or any budgetary priorities, there is no path to fiscal sanity in Washington. U.S. debt is now larger than our GDP, and headed in the wrong direction. This does not make for a comforting future, a fact reflected by low consumer and small-business owner optimism.?

NFIBA retrospective upon the last 12 months of the Index suggests that for small-business owners, 2011 was a ?flat? year. While the Index is edging in a positive direction, January 2012?s survey indicates that the economy will continue to crawl along at a slow and weak pace.

Some other highlights of January?s Optimism Index include:

  • NFIB reports of job growth improved (0.15) from December, but only to net zero (0) new workers per firm. The Bureau of Labor Statistics (BLS) report issued on February 3rd showed relatively strong job creation for January; NFIB?s data suggest that there will be some downward revision in BLS numbers, especially in light of the adjustments in the Household Survey that suggested a huge number of adults left the labor force. Seasonally adjusted, 11 percent of owners added an average of three workers per firm over the past few months, while 11 percent reduced employment an average of 2.9 workers per firm. The remaining 78 percent of owners made no net change in employment. Owners reporting reductions in employment remained relatively low, suggesting that firms are through cyclically adjusting their employment. Reports of workforce reductions are at their lowest level since October 2007. Forty-one percent of owners hired or tried to hire in the past three months, but 31 percent reported few or no qualified applicants for the position(s). The increase in the percent of owners with hard to fill job openings indicates that job markets are tightening somewhere, and correctly anticipated a decline in the unemployment rate.
  • The frequency of firms that reported making capital expenditures over the past six months lost one point, declining to 55 percent, but still retaining the solid gain posted in December. The record low of 44 percent was reached most recently in August 2010. Of those making expenditures, 38 percent reported spending on new equipment (down 4 points), 20 percent acquired vehicles (unchanged), and 13 percent improved or expanded facilities (unchanged). Six percent acquired new buildings or land for expansion (up 1 point) and 11 percent spent money for new fixtures and furniture (down 2 points). While the spending picture has improved, it still falls short of ?normal?. The percent of owners planning capital outlays in the next three to six months held at 24 percent; this is the highest reading in years, but still 10 points lower than those typically seen in an expanding economy.
  • The net percent of owners expecting better business conditions in six months was a negative 3 percent, 5 points better than December but still 13 percentage points below last year?s reading. Not seasonally adjusted, 18 percent expect deterioration (down 4 points), and 22 percent expect improvement (up 7 points). A net 10 percent of all owners expect improved real sales volumes, up 1 point and the strongest reading since the beginning of the year. Twenty-two percent report ?poor sales? as their top business problem, down 1 point, but still the top business problem reported.
  • Increasing 3 points over December, a net negative 7 percent of all owners (seasonally adjusted) reported growth in their inventories. January marks 56 consecutive months during which reported inventory reductions have outnumbered reported increases. Unadjusted, 11 percent reported growth in inventory stocks (unchanged) and 22 percent reported inventory reductions (up 1 point). More owners reported weaker sales quarter on quarter than improvements, so demand can be met by reducing inventories on hand. Overall, it appears that small-business owners have reduced inventories to acceptable levels given the outlook for sales growth. Without improved sales, there is little motivation to order new inventory stocks. Plans to add to inventories dropped 5 points, arriving at a disappointing net negative 3 percent of all firms (seasonally adjusted). This drop is notable because December?s reading was the best in 18 months.
  • Eighteen percent of the NFIB owners reported raising their average selling prices in the past three months (up 1 point), and 17 percent reported price reductions (down 1 point). Seasonally adjusted, the net percent raising selling prices was -1 percent, down a point from December. The frequency of price increases was highly concentrated in the Wholesale (a net 14 percent raised prices) and Retail (net 4 percent raised). Those cutting prices exceeded those raising prices by 14 percentage points in Construction and Agriculture, largely a result of seasonal impact. Twenty-three (23) percent of owners plan to raise average prices in the next few months, while 3 percent plan reductions. Seasonally adjusted, a net 17 percent plan price hikes up 3 points. With some evidence that spending has picked up, some of these price hikes might stick.

Planck all-sky images show cold gas and strange haze in Milky Way galaxy

ScienceDaily (Feb. 13, 2012) ? New images from the Planck mission show previously undiscovered islands of star formation and a mysterious haze of microwave emissions in our Milky Way galaxy. The views give scientists new treasures to mine and take them closer to understanding the secrets of our galaxy.

Planck is a European Space Agency mission with significant NASA participation.

"The images reveal two exciting aspects of the galaxy in which we live," said Planck scientist Krzysztof M. Gorski from NASA's Jet Propulsion Laboratory in Pasadena, Calif., and Warsaw University Observatory in Poland. "They show a haze around the center of the galaxy, and cold gas where we never saw it before."

The new images show the entire sky, dominated by the murky band of our Milky Way galaxy. One of them shows the unexplained haze of microwave light previously hinted at in measurements by NASA's Wilkinson Microwave Anisotropy Probe (WMAP).

"The haze comes from the region surrounding the center of our galaxy and looks like a form of light energy produced when electrons accelerate through magnetic fields," said Davide Pietrobon, another JPL Planck scientist.

"We're puzzled though, because this haze is brighter at shorter wavelengths than similar light emitted elsewhere in the galaxy," added Gorski.

Several explanations have been proposed for this unusual behaviour.

"Theories include higher numbers of supernovae, galactic winds and even the annihilation of dark-matter particles," said Greg Dobler, a Planck collaborator from the University of California in Santa Barbara, Calif. Dark matter makes up about a quarter of our universe, but scientists don't know exactly what it is.

The second all-sky image is the first map to show carbon monoxide over the whole sky. Cold clouds with forming stars are predominantly made of hydrogen molecules, difficult to detect because they do not readily emit radiation. Carbon monoxide forms under similar conditions, and though it is rarer, the gas emits more light. Astronomers can use carbon monoxide to identify the clouds of hydrogen where stars are born.

Surveys of carbon monoxide undertaken with radio telescopes on the ground are time-consuming, so they are limited to portions of the sky where clouds of molecules are already known or expected to exist. Planck scans the whole sky, allowing astronomers to detect the gas where they weren't expecting to find it.

Planck's primary goal is to observe the Cosmic Microwave Background, the relic radiation from the Big Bang, and to extract its encoded information about what our universe is made of, and the origin of its structure.

This relic radiation can only be reached once all sources of foreground emission, such as the galactic haze and the carbon monoxide signals, have been identified and removed.

"The lengthy and delicate task of foreground removal provides us with prime datasets that are shedding new light on hot topics in galactic and extragalactic astronomy alike," said Jan Tauber, Planck project scientist at the European Space Agency.

Planck's first findings on the Big Bang's relic radiation are expected to be released in 2013. The new results are being presented this week at an international astronomy conference in Bologna, Italy.
